FOR LITTLE HISTORY:
 
There are many stories around the coriander, its scientific name coriandrum sativum.

The earliest written evidence of the use of coriander is a papyrus dated 1550 BC. JC making the list of medicinal plants used by the Egyptians. We find traces in the tombs of pharaohs such as Tutankhamun.

In Europe, it has been used since ancient times as a medicinal and aromatic plant. Like many spices, it was the Romans who introduced in Europe. They used a lot for its preservative properties to preserve meat.
 
Its name is derived from Greek and means "husband bug" because of the strong smell of fresh leaves and unripe seeds, which can sometimes disturbing.

HOW TO USE THE CORIANDER IN THE KITCHEN?
 
Whole, Chinese parsley perfume jars of pickles, liqueurs and olive oils. Add it in your piri piri (spicy olive oil).

And associated with ground peppercorns, the seeds fall into the basic composition of powders or curry pastes, or adorn the tagine, sausages and terrines. The scent of coriander is subtly orange.
 
In Algeria, in the Highlands, coriander seeds are ground and mixed with a garlic preparation which gives a powder having a very strong smell (koussbor oua Thoum, coriander and garlic). This powder is used in the preparation of many dishes such as couscous.

This is a spice to sprinkle again on fish, grilled meat, potatoes, soups, rice, egg and salad (it is also part of the blend of spices for salad).
